Food Combining in Green Smoothies

A chapter from Victoria’s up-coming book “Green Smoothie Revolution”

many different fruits and vegetables that are green in color simply because they are unripe. They do not belong to the category of greens. For example, many green apples, grapes, melons, bananas, limes, and pears are unripe yellow fruits. Similarly, green bell peppers are unripe colored bell peppers. Unripe fruit usually contains enzyme inhibitors, which slow the action of our digestive enzymes and may cause irritation of the intestines. In addition, unripe fruit has a higher content of starch and less fruit sugar, which makes it harder to digest. For this reason, I never buy unripe fruit. However, I am concerned that many people don’t understand which greens are most beneficial, because I have received e-mails from confused readers who stopped buying ripe fruit in order to consume more greens. Keeping greens in the same category as vegetables is misleading and can even be harmful to public health. I suggest that our produce departments have at least the following three separate sections: fruits, vegetables, and greens. I define “greens” as the flat leaves of a plant, attached to the stem, that can be wrapped around a finger, with a very few exceptions, including nopal cactus leaves and celery.

Dr. Anne Wigmore, who pioneered raw food in the United States, taught in her lectures that green leaves are the only food that can be combined with every other food group without any negative effects.

In his book Food Combining Made Easy, Dr. Herbert Shelton explains that starchy foods have to be eaten alone because starches are digested with enzymes different from those used for any other food group. Combining starchy foods with fruit may cause fermentation and gas. Dr. Shelton has found that combining green vegetables with every food group produces favorable results.

I see several benefits in adding greens to other foods. For example, besides having high nutritional value, greens contain a lot of fiber. The fiber in the greens slows down the absorption of sugar from fruit. This quality makes drinking green smoothies possible, even for people with high sensitivity to sugar, such as those who have diabetes, candida, or hypoglycemia.

Vegetables such as carrots, beets, broccoli, zucchini, daikon radish, cauliflower, cabbage, Brussels sprouts, eggplant, pumpkin, squash, okra, peas, corn, green beans, and others do not combine well with fruit due to their high starch content. While these vegetables are nutritious and beneficial for our health, their high starch content makes them unsuitable for use in smoothies.

If you do not want to mix sweet fruit into your green smoothies, you can use nonstarchy vegetables such as tomatoes, cucumbers, bell peppers, avocados, celery, and others. You can also consider using low–glycemic index fruit such as berries (any kind), apples, cherries, plums, and grapefruit.

So, can we combine greens and fruits in our smoothies? Absolutely.

To Green Smoothies!!!!
Very Useful Info!!

Which fruits taste good with which greens?

Here are some tried-and-true combinations that unlock the secret to delicious smoothies. The fruits in parentheses are optional. I’ve suggested banana to sweeten EVERY smoothie, but you could also use pear, apple or mango. Use no more than 4 ingredients to keep your smoothie digestible (not counting a dash of grated ginger or squeeze of lemon, both of which aid digestion). Of course, I hope you’ll experiment to find your favorites!

The Kale Family: Any variety of Kale OR Dandelion Greens, PLUS Apple OR Mango OR Pear, AND Banana (berries OR kiwi)

The Spinach Family:
Spinach, PLUS Apple OR Peach OR Mango OR Kiwi, AND Banana & a squeeze of lemon (berries OR cherries OR figs)

The Collard Family: Collards, PLUS Blueberries OR Peaches OR Cranberries, Peaches OR Pear, AND Banana

The Orange Family: Arugula OR Celery OR Swiss Chard, PLUS Orange OR Mango, AND Banana (strawberries, peaches OR pineapple)

The Sprout Family: Romaine OR Clover Sprouts, PLUS Apple OR Pear, AND Strawberries OR Kiwi, AND Banana

The Herb Family: Parsley OR Cilantro, Apple OR Mango, Banana (strawberries, pineapple)

You can use this overview as a guide whenever you’re at the grocery store looking for what’s fresh and ripe!

Can someone post a recipe or a link to a recipe for Green Smoothies? Thanks!
My wife makes them. Here's what she says:

Basically you do it in a blender. You can use any fruit you like and any greens, or a combination: parsley, kale, collards, turnip greens, mustard greens, watercress, spinach, etc. You need to keep it sweet and liquid while getting in as many greens as possible. I sometimes add more water along the way.

If you use nuts or seeds (no more than 1 or 2 tablespoons), grind them first in the blender; then add water; then fruit; then greens.

If you don't use nuts or seeds, the water and fruit go first; then the greens.

When it's all together, you may want to blend in a couple of ice cubes.

Here are some recipes.

Donna Karan's Green Juice Recipe

The designer shared her recipe for this energizing, green juice when she appeared on The Martha Stewart Show.

* 5 apples
* ½ bunch celery
* ½ bulb fennel
* 1 cucumber
* ½ head of romaine lettuce
* 1 (1 to 2 inch) piece of ginger
* 1 lemon peeled
* 2 cups greens (kale, spinach or parsley)

1. Wash everything well.

2. Process in a juicer, then drink

My Green Smoothie

I have trouble getting this to be a liquid, because I process it in a blender to get the benefit of the fiber. It’s a work in progress. Still, it’s good as a slush, eaten with a spoon. Eat or drink slowly, no more than 1 cup at a time. Can have more maybe half an hour later.

1/2 bunch turnip greens, washed, drained, and trimmed

2 or 3 apples

1 1/2 tablespoons of almonds and 1 or 2 fresh dates, soaked in 1/2 cup (or more) water

piece of ginger, cut up

fresh mint leaves, pulled off the stem

a few sprigs of parsley

a stalk of celery

First the almond-date milk. Then the apples. Then the ginger and mint. Then the greens, a little at a time through the top with the blender running continuously.

Dr. Oz’s Green Drink for Breakfast, from Oprah’s website

* 2 cups spinach
* 2 cups cucumber
* 1 head of celery
* 1/2 inch or teaspoon ginger root
* 1 bunch parsley
* 2 apples
* Juice of 1 lime
* Juice of 1/2 lemon

After everything is combined in a blender, this recipe makes 28 to 30 ounces—about three to four servings.

This is similar to mine and Donna Karen’s. I can’t use a whole head of celery at a time, heaven help us, so I would make half this amount. And I would add fresh mint from the pot. Anyway, this sounds too solid to me; probably needs water.

My Best Green Smoothie Ever
